A miniature version of the traditional baked mooncake. These dainty mooncakes are filled with homemade smooth and creamy lotus seeds paste. So delectably good!

INGREDIENTS
Lotus Seed Paste:
- 300gramsdried lotus seedsMakes about 800g lotus seed paste
- 1/2tbspalkaline water
- 250gramssugar
- 200gramsvegetable oil
- 30gramsmaltose
Mooncake Skin Dough:
- 190gramsgolden syrup
- 50gramsgroundnut oil
- 1tspalkaline water
- 250gramsall-purpose flour
Mooncake Fillings:
- 600gramslotus seed paste
- 22Salted egg yolksbaked 5 minutes
- 60gramsmelon seedstoasted
Egg Wash:
- 1egg yolklightly beaten
Mooncake mould:
- 1mooncake mould70g
peanut oil gives it extra fragrance.
Alkaline water is a key ingredient as it causes the skin of mooncake to have a dark golden colour.
mooncakes need to be left aside for a few days before consumption to allow the oil in the filling to be released and gives the skin a more shiny and soft texture
The mould I use is 70g. I use 4:6 for skin:filling so if your mould is 50g, then it will be 20g skin to 30g filling. For thinner mooncake skin you can use 3:7 so its 15g skin to 35g filling
